Artichoke Turkey Salami Salad

“For this easy salad, add any type of cooked turkey you want.” Serving: 8 servings. | Prep: 20m | Ready in: 20m

Ingredients:

• 4 cups cooked elbow macaroni
• 2 cups shredded part-skim mozzarella cheese
• 2 cups cherry tomatoes, halved
• 8 oz. turkey salami, cut into thin strips
• 1 cup roasted sweet red pepper strips, drained
• 1 jar (7-1/2 oz.) marinated artichoke hearts, drained and chopped
• 1 can (2-1/4 oz.) sliced ripe olives, drained
• 1/3 cup Italian salad dressing
• 1/4 cup minced fresh basil
• 1/2 tsp. pepper

Direction:

• Mix the olives, artichokes, red peppers, salami, tomatoes, mozzarella and macaroni together in a big salad bowl. Put in the pepper, basil and dressing; coat it by tossing.
• Keep it covered and chilled in the refrigerator for 2 hours to overnight. Toss prior to serve.
