Almond-apricot Chicken Salad

“This is a unique pasta salad recipe which includes crunchy veggies, sweet apricots and tender chicken.”

Ingredients:

• 1 package (8 oz.) spiral pasta
• 1 package (6 oz.) dried apricots, thinly sliced
• 3 cups coarsely chopped fresh broccoli
• 2-1/2 cups diced cooked chicken
• 1/2 cup chopped green onions
• 1/2 cup chopped celery
• 1 cup sour cream
• 3/4 cup mayonnaise
• 1 tbsp. lemon juice
• 2 tsps. grated lemon zest
• 2 tsps. Dijon mustard
• 1-1/2 tsps. salt
• 3/4 tsp. dried savory
• 1/2 tsp. pepper
• 3/4 cup sliced almonds, toasted

Direction:

• Follow the package cooking instructions to cook pasta; on the last 4 minutes of cooking, putting in apricots. Drain, then rinse with cold water; put in a big bowl. Put in celery, onions, chicken and broccoli.
• Mix the next 8 ingredients in a small bowl. Transfer over salad; toss to coat. Chill with a cover until ready to serve; fold in almonds.
