Acini Di Pepe Salad

Acini Di Pepe Salad

“This chilled fruit salad is very tasty and wonderful, especially using together with a tiny round-shaped pasta that is very excellent in summertime.”

Ingredients
• 1 cup acini di pepe pasta
• 1 (20 oz.) can crushed pineapple, drained with juice reserved
• 1 (15 oz.) can mandarin oranges, drained with liquid reserved
• 1 (8 oz.) container frozen whipped topping, thawed
• 7 oz. miniature marshmallows
• 1 cup white sugar
• 2 eggs, beaten
• 1/2 tsp. salt
• 3 tbsps. all-purpose flour
• 1 (10 oz.) jar maraschino cherries, drained (optional)

Direction
• Bring lightly salted water in a big pot to a boil; put in pasta and cook until al dente, about 8-10 minutes. Drain.
• Mix together flour, salt, eggs, sugar and reserved juices from oranges and pineapple (equals approximately 1 1/2 cups) in a medium saucepan; cook until thick while stirring continuously. Once mixture has thickened, put in cooked pasta and chill overnight.
• On the following day, put in oranges, pineapple, marshmallows and whipped topping to taste. Stir together and place cherries on top if wanted. Keep cold until served.
